My husband thinks this new-found eating plan is great! Not because he wants everything I'm serving, but because he's happy I'm cooking every day (which we both loathe) and that I might actually find 'myself' and get my energy back and stop complaining every day of my life that my 'tummy hurts' (Been complaining for 20 years...why stop now?! ha). Not gonna lie, even the kids are pretty excited to see if my tummy will stop hurting (fact: so am I!!!). The Naan from yesterday did NOT do that. In fact I thought I was dying all night and this morning I was in such agony. Which really, really, stunk, because it was sooooooooooo darn good!!! No more yeast for me, but if you can handle yeast, go for it. One of the nicest Naan I have had (with the exception of my favourite indian haunt (also named Tara :)
Because I was dying for most of the morning, I only ate a handful of berries and then worked, and smiled my way through it, and then died some more until lunch-hour arrived. I thought something light would be best and opted for a sliced avocado with sea salt and some naturally sweet dates.
Today included a major cheat and I had a monster handful of Cadbury Mini Eggs while I was preparing an amazingly healthy dinner (go figure). I must have some hungry candida monsters in my gut that went into over-drive with the yeast and again gobbled up my chocolate treat (major fail...but I'll get over it).
While I am doing my best to ignore it, I am still dizzy and the left side of my face still intermittently numb. This, for lack of a better term, sucks, and if there is permanent damage because the doctors were lazy, we are going to have a problem!!!
Below are some loose instructions on how to prepare dinner and a pic of my beautiful lunch :) You can make a hamburger, just remove the mint and maybe add some green pepper instead of the mint (or halepeno and a dash or two of chipotle for a spicy burger), and replace the lamb with lean ground beef. I love lamb, but am solo in that choice around my own house. Lamb is gamy and your palette has to appreciate that and mint (lamb is best with mint). On my husbands Lamburger, he put it on a bun as he does not share my issues, and we melted some brie on top. Swiss would be lovely, as would a dollop of dijon mustard. I stuck to the basics. The lamburger mixture was derived from the Make it Paleo book I mentioned the other day, and the fixings were my own idea. The salad is something we eat around here often, and can be found in almost every diet/healthy eating book on the planet.
Lunch: Avocado with sea salt and chopped dates (delightful combination! I love the sweetness of the dates in contrast to the avocado/salt flavouring). Dreamt up by me and my cravings for salty and sweet.
Preparing the LAMBURGER!!! Ingredients: 1lb ground Lamb, shallots minced, garlic minced and fresh mint chopped
Divide Lamb mixture into 4 pieces and flatten into patties (I stored mine between sheets of waxed paper (and in an airtight container) until ready to bbq)
Combined with a grilled portabello mushroom, a slice each of tomato and green pepper and garnished with mint leaves, this burger was a juicy sensation! No bun required.
A lovely addition to this LAMBURGER was a quickly prepared Mediterranean salad: Easy!! Chopped/seeded cucumber, halved cherry/grape tomatoes, pitted and sliced (torn...I'm lazy) Kalbata olives, cilantro and oregano chopped, olive oil, balsamic vinegar, salt and pepper to taste! If you can handle dairy, I would add some feta cheese (goat).
If you try this meal...it's sure to be a hit!! So delicious :) Next time, I'm adding home-made sweet-potato fries!!
